When you order Thai food, you become part of a gastronomic heritage that began in Southern China and progressed across the Western world. Thailand first took its flavours from Portugal and Holland. Later, a Buddhist monk added a touch of India and Japan. Today, the cuisine combines four tastes: sweet, sour, salty, and spicy--the perfect balance. Regional differences cater to a country with diverse regions. There are four basic forms of Thai cuisine. Sticky rice and ginger are characteristically Northern. North-Eastern Thai is spicy, using shrimp and freshwater fish as proteins. Central Thai dishes are far more complex, relying on fragrant Jasmine rice and artistic cooking techniques. Finally, Southern Thai food includes cashew nuts and a coconut milk base. The latter has won more Western fans than any other region.
